Healthy Baked Berry Oatmeal

Oatmeal is one of my favorite choices for breakfast, but can quickly become boring and dull.  I love this recipe because it is very versatile and easy.  It can also be baked ahead of time and and stored in the fridge.  When you’re ready to eat, just heat up in the microwave and stir in a little milk if you like!  Hope you enjoy it!

Healthy Baked Berry Oatmeal

3 cups old fashioned oats
1/2 cup of brown sugar
2 teaspoon of baking powder
1/2 cup shredded coconut, walnuts, pecans, or other nut (optional)
1/2 teaspoon of salt
1 1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
2 scoops of Arbonne vanilla protein powder (optional)
1 cup of milk or almond milk
2 large eggs, lightly beaten
1 cup of unsweetened applesauce
2 teaspoons of vanilla
2-3 bananas peeled and sliced (optional)
1 cup berries of your choice, fresh or frozen, divided

Preheat oven to 350 degrees F.  Grease a 9X13 pan and layer sliced bananas along the bottom of the pan in a single layer. Set aside.  In a large bowl combine oats, brown sugar, baking powder, salt, cinnamon, nutmeg, protein powder, and nuts.  In a small bowl combine milk, eggs, applesauce and vanilla.  Stir wet mixture in to the dry mixture and stir until combined.  Stir in berries if desired.  Pour evenly over the bananas.  If desired, top with additional berries, bananas, nuts, brown sugar, spices, etc.  Bake for 25-30 minutes or until the oats are set and golden brown.  Let sit 10 minutes before serving.
