White Chocolate Chip Macadamia Cookies

These cookies are highly addicting!  Soft, chewy and delicious!  I have to take them to a neighbor or share with a friend or I end up eating way too many!  Have the recipe handy because your friends will be asking for it.

White Chocolate Chip Macadamia Cookies

 

2 3/4 cups of flour (I use King Arthur)

1 teaspoon of baking soda

3/4 teaspoon of salt

1 cup/2 sticks of butter, softened so it is almost all melted and slightly cooled

3/4 cup of sugar

3/4 cup of brown sugar

2 eggs

1 1/2 teaspoon of vanilla

1 1/2 cup of white chocolate chips

1 cup of chopped macadamia nuts

Preheat oven to 350 degrees F and line cookie sheets with silpat liners or parchment paper.  In a medium mixing bowl combine flour, baking soda, and salt.  In the bowl of an electric mixer beat butter and sugars until light and fluffy, using the paddle attachment.  Add eggs and vanilla and beat until combined.  Turn mixer to low and slowly add the dry ingredients.  Beat just until combined.  Stir in white chocolate chips and macadamia nuts.  Drop by rounded teaspoons onto prepared baking sheets.  Bake for 8 minutes, or until the bottoms are golden, then let sit for 2 minutes before moving to a cooling rack.   The tops of the cookies may look underdone, but will set more as they cool.  Do not over bake!  These are AMAZING warm out of the oven!
