Healthier Oatmeal Chocolate Chip Cookies

Are you one of those people who always want a cookie after lunch?  Who feel cheated if you don’t get dessert every night?  If you are, these cookies are for you!  They are just under 100 calories, have about 4.5 grams of sugar, a gram of fiber, and 2 grams of protein.  Not bad for a chocolate chip cookie, right??  Add almonds, dried fruit, white chocolate, etc to make them your own and enjoy a low guilt treat!


Healthier Oatmeal Chocolate Chip Cookies

(About 22 cookies)

1/3 cup of flour

1/3 cup of almond meal (or wheat flour)

1 1/2 cup of quick cooking oats

2 tablespoons of flax seed meal

1 teaspoon of baking soda

1/2 teaspoon of salt

1 teaspoon of cinnamon

dash of nutmeg

6 tablespoons of butter, melted and slightly cooled (can substitute coconut oil!)

1/2 cup of packed brown sugar

2 teaspoons of vanilla

1 large egg

1/2 cup of dark chocolate chips

Preheat oven to 350 degrees F and line cookie sheets with parchment paper or silpat mats.  In a large mixing bowl stir together flour, almond meal, oats, flax seed meal, baking soda, salt, cinnamon, and nutmeg.  In a small bowl stir butter and sugar until combined.  Add sugar mixture to flour mixture, then stir in egg and vanilla.  Stir in chocolate chips.  I use my tablespoon scoop to drop rounded tablespoons onto cookie sheets.  Bake for 8-10 minutes.  Let sit for a few minutes, then transfer to cooling rack.
