Apple Cinnamon Oatmeal Quinoa Bites

Did you know Quinoa is considered a super food??  It is rising in popularity quickly as many people recognize its nutritional benefits.  Have you tried it yet??  I have to admit the first time I tried it I wasn’t impressed.  It has a strong “grainy” flavor and can easily overpower other flavors.  However, after having it a few times, I believe I am coming to appreciate its flavor, and definitely its many health qualities!  This recipe calls for 2 cups oats and 1 cup quinoa, but if you like the taste feel free to substitute more quinoa in place of the oatmeal.   These little guys are about 60 calories each, 2 grams of protein, and only 2 grams of sugar!  If you have busy mornings but still want a nutritional breakfast these are the way to go!  You can whip up a batch over the weekend and have a healthy breakfast all week long!  I hope you try give them a try!



Apple Cinnamon Oatmeal Quinoa Bites

(about 32 bites)

1 cup of cooked quinoa

1 cup of quick cooking oats

1 tablespoon of cinnamon

1/2 teaspoon of nutmeg

1/2 teaspoon of salt

2 tablespoons of brown sugar

2 tablespoons of flax seed meal

2 tablespoons of honey

2 tablespoons of unsweetened applesauce

1/2 cup of almond milk

2 eggs, lightly beaten

2 teaspoons of vanilla

1 cup of chopped apple (about 1 medium apple.  I used granny smith but any kind will work)

1/3 cup of sliced almonds


Preheat oven to 350 degrees F and generously spray a mini muffin tip with non stick cooking spray.  In a large bowl combine oats and cooked quinoa.  In a small bowl stir cinnamon, nutmeg, salt, brown sugar, and flaxseed meal.  Add to the oat mixture.  Next add your honey, applesauce, almond milk, eggs, and vanilla.  Stir until combined.  Finally stir in your chopped apple and sliced almonds.  Use a small tablespoon sized scoop to fill muffin tin.  Bake for 12-15 minutes or until golden and set.  Store in an airtight container.

Note: Quinoa cooks easily and quickly in a rice cooker following the same rules as cooking rice!
