Turkey Meatloaf with Spinach and Sun-Dried Tomatoes

This is not your Grandma’s meatloaf!  Most people would not consider meatloaf an exciting dinner, but this recipe just might change your mind.  The flavors really compliment each other, and its lighter than regular meatloaf.  I hope you try it soon! (PS It is hard to get a flattering picture of meatloaf!  I hope you won’t let that deter you and you’ll try it anyways!)

Turkey Meatloaf with Spinach and Sun-Dried Tomatoes

(Makes 6-8 servings, depending on how hungry you are ;) )

1-1 1/2 pounds of ground turkey

1 tablespoon of olive oil

1/2 onion, chopped fine

1/2 cup of sun-dried tomatoes, chopped

1/2 cup of chicken broth

1 tablespoon of Worcestershire sauce

1 cup of chopped spinach

1 cup of bread crumbs

1/4 cup of grated parmesan cheese

1 egg

1 cup of milk

1/2 teaspoon of garlic salt

1/2 teaspoon of onion powder

salt and pepper

additional tablespoon each of bread crumbs and parmesan cheese for the top

Preheat oven to 375 degrees F and grease a 9X5 loaf pan with non stick cooking spray.  Heat olive oil in a medium skillet and add chopped onions and sun-dried tomatoes.  Cook until onions are translucent then add chicken broth and Worcestershire sauce.  Once it is heated through, remove from heat and set aside.  In a large bowl combine ground turkey, spinach, bread crumbs, parmesan cheese, egg, milk, and spices.  Add in the onion and tomato mixture and mix just until combined.  Press evenly into the loaf pan and sprinkle remaining bread crumbs and parmesan on top.  Bake for 45-55 minutes, or until cooked through.  Let sit for 5 minutes before serving.  Great as leftovers too!
